I need to turn up a new board as the old one is now splitting and quite discoloured. Any recommendations for a suitable timber and any treatment prior to use. The old one was oak treated with chopping board oil and virgin olive oil.

Beech is supposed to have antibacterial properties.
I do not think therefore I do not am.

Beech. It's bomb-proof. We we're given one as a wedding present 32 years ago that our grandchildren will no doubt inherit.

Sycamore is good timber for them too.
No need to oil just give them a wash and or scrub in the sink - no dishwasher.
We have a breadboard in oak which has been regularly used for 50yrs and still going strong.
I made some boards for my daughter in beech who despite warnings, washed them in the dishwasher where they immediately split!!
